At Nom we truly love coleslaw, it give us an excuse to mix it with a fiery dinner. Also this is a great side to make if you have been invited to a pot luck.
Ingredients
1 Apple
2 Spring Onions
Half a Red Pepper
1 Jalepeno Pepper
1 Tablespoon Ground Black Pepper
2 Large carrots
Quarter of 1 White cabbage
Half of a Lime
3 heaped table spoons of Mayonnaise
2 table spoons of Salad Cream
Method
Rinse the vegetables and apple, core the apple and cut it into small diced chunks leaving the peel on. Grater the carrots if you have a Mandolin, use it to slice the cabbage thinly.
Add the black pepper and mix all of the ingredients together until all of the vegetables are evenly distributed. All the juice of the lime
Add the mayonnaise and the salad cream to the mixture.
Refrigerate before serving.
Note: If you do not want to use mayonnaise or salad cream mix together a quarter cup of red wine vinegar, two tablespoons of olive oil and a tablespoon of sugar.
