Fifteen years ago, we discovered this hidden treasure during a trip to Vietnam, where we met an 80-year-old woman who radiated health and vitality. When we asked her secret, she smiled and said, “Have you had your cinnamon today?”

She introduced us to a unique cinnamon, grown high in the Vietnamese mountains, where the perfect mix of climate, altitude, and humidity produces cinnamon with an unmatched quality that promotes well-being.

The cinnamon trees are sustainably harvested by a local family, used not only for spice but also to craft beautiful, aromatic canisters from its bark. Its small, exclusive production means few people have ever experienced it, until now.

Where does Nom Premium Cinnamon come from?

Our cinnamon comes from a mountainous region in the centre of Vietnam. The combination of the high altitude and humid climate of this specific region creates the perfect environment for a type of Cassia tree to thrive. The spice itself comes from the bark of this Cassia tree, which has a higher concentration of natural oils due to local conditions.

How does it taste and what can I use it for?

Nom Premium Cinnamon has an intense aroma and flavour. It is sweeter and more pungent than other types of cinnamon and lends itself well to baked goods and desserts. Cinnamon is also commonly used in all sorts of savoury cooking, famously an essential ingredient in the Vietnamese national dish, Pho.

What is the difference between Cassia and Ceylon cinnamon?

Cassia cinnamon is mostly native to China and Vietnam, while Ceylon cinnamon is found in Sri Lanka and India. Ceylon cinnamon is considered more floral and subtle in flavour, whilst cassia is punchier and sweeter. Although cassia cinnamon is generally more commonly found, our Nom Premium Cinnamon is sourced from a part of the tree with a higher concentration of natural oils. This not only contributes to its quality and flavour, but also to its rarity.

Is Nom Premium Cinnamon sustainably sourced?

Our cinnamon is 100% sustainable and handcrafted, so you can feel good about every sprinkle.

We have been working alongside the same small family-owned producer for all our cinnamon products for almost two decades. Our bark is sourced from a cinnamon farmer whose focus is sustainability and the preservation of cinnamon plantations in this area of Vietnam. The entire tree is used after harvest, the bark for our boxes, spice and incense, but also the leaves for essential oil and the timber to be pulped for paper. New trees are replanted as part of a cycle to preserve the population and natural biodiversity of the area.

What are the health benefits of Nom Premium Cinnamon?

Cinnamon has been considered a valuable component of traditional Chinese medicine for centuries. We are only now starting to witness its growing importance in Western medicine, due to the properties that come from the essential oils and compounds found in cinnamon.

Cassia cinnamon is rich in antioxidants, anti-inflammatories, has natural anti-bacterial properties and most crucially benefits high glucose and cholesterol levels. Recent studies have suggested that this may very well be a natural and effective way to help alleviate symptoms of type-2 diabetes.

How can I use my cinnamon bark canister?

Our cinnamon bark canisters are handcrafted from the exact same raw material that is used for our ground spice. This gives it that same punchy aroma which can be used to flavour anything that is stored inside the canister.

We recommend sugar, ground coffee, loose tea, flour and oats. Snacks such as chocolates, dried fruit and nuts will all be infused with that recognisable spicy flavour.

How long does the aroma of my canister last?

The aroma can last for many years as it is a natural component of the bark our canisters are made from. If it fades over time, we suggest gently rubbing the surfaces with fine grain sandpaper to revive that beautiful aroma.

How do I care for my cinnamon bark container?

We recommend handwashing only, but infrequently, as cinnamon has natural antibacterial properties. Once washed, allow the canister to dry thoroughly prior to refilling.
